Ingredients
BLUEBERRY DESSERT PIZZA
Pita:
- 2 cups shredded mozzarella cheese (low moisture)
- 2 tbsp cream cheese, low fat
- 2 eggs, beaten
- ¾ cup almond flour
- ½ tbsp baking powder
Blueberry Compote:
- 1 cup blueberries, fresh or frozen
- Juice from ½ lemon
- 1 tsp zero calorie sweetener
Ricotta Cream:
Method
- Preheat the oven to 350 F and prepare a large baking sheet with parchment paper.
- In a microwave safe bowl, melt the mozzarella and cream cheese together for 30 seconds andstir smooth.
- Whisk in the eggs, almond flour and baking powder. Let the mixture sit for 5 minutes for the flour to absorb some of the moisture.
- Form the dough into a ball and place it on the baking sheet and press it flat.
- You can wet your hands if the dough is sticking too much.
- Meanwhile, make the compote by placing the ingredients into a small pot over medium heat.
- Cook until the blueberries begin to burst, about 4-5 minutes.
- Using the back of a wooden spoon, gently smash half of the blueberries.
- Remove from heat and let cool.
- Bake the crust for 14-18 minutes and golden. Let cool.
- In a bowl of a stand alone mixer, beat together the cream cheese and sweetener.
- Mix in the heavy cream, protein, vanilla and zest. Add the ricotta and combine.
- Assemble by spreading the ricotta cream over the crust, top with blueberry compote and QuestBlueberry bar pieces.
- Cut into 12 slices and serve.
