Ingredients

SPICY CHEDDAR CHEESE CRACKERS QUICHE

Crust

Filling:

  • 6 eggs
  • ½ cup part skim ricotta cheese
  • ½ cup cheddar cheese, grated
  • ¼ tsp salt
  • 1 tbsp hot sauce
  • 2 cups spinach, chopped
  • 5 cherry tomatoes, halved

Method

  1. Preheat the oven to 350 F and prepare a 9” pie dish with non-stick spray.
  2. Place the almond flour and cheese crackers into a food processor and pulse until small crumbles form.
  3. Add in the melted butter and pulse to combine.
  4. Press the mixture into the bottom and up the sides of the pie dish.
  5. Use the bottom of a measuring cup to flatten and smooth. Bake the crust for 5 minutes, cover with tin foil and bake an additional 6-7 minutes.
  6. In a large bowl, beat the eggs. Whisk in the ricotta, cheddar cheese, salt, hot sauce and chopped spinach.
  7. Pour the egg mixture into the baked pie crust and top with tomatoes.
  8. Bake for 10 minutes, cover and continue to bake for 35-40 minutes or until cooked through.
  9. Cut into 8 slices and serve.
