Ingredients
MINI STUFFED BELL PEPPERS
- 8 mini bell peppers
- 5 tbsp cream cheese, room temperature
- ⅓ cup sharp cheddar cheese, shredded
- 1 bag Quest Cheddar Blast Cheese Crackers, crushed
- ½ tsp garlic powder
- Salt and pepper to taste
Method
- Pre-heat the oven to 350 F and prepare a baking sheet with parchment paper.
- Cut the bell peppers in half lengthwise and remove seeds.
- In a bowl, stir together the cream cheese, cheddar cheese, cheese crackers, garlic powder, salt and pepper.
- Stuff each bell pepper half with the cream cheese mixture.
- Bake the stuffed peppers for 15-20 minutes and tender. Serve immediately.
