Ingredients

APPLE PIE ICE CREAM CUPS

  • 2 Quest Apple Pie Bars
  • 12 tbsp low calorie ice cream
  • ¼ granny smith apple, chopped
  • 1 tbsp butter
  • ¼ tsp cinnamon

Method

  1. Preheat the oven to 350 F.
  2. Unwrap the bars and place them beside each other on a piece of parchment paper.
  3. Microwave for 10 seconds.
  4. Cover with another piece of parchment and use a rolling pin to roll the bars together until flat.
  5. Use a 2” cookie cutter to make 8 rounds.
  6. Spray a mini tart pan or mini cupcake pan with non-stick spray.
  7. Press the rounds into the cavities of the pan to make “cups”.
  8. Press any extra scraps into the cups. Bake the cups for 6-7 minutes and golden. Let the cups cool completely before removing.
  9. Add the butter to small sauce pan over medium-low heat.
  10. Once hot, add the apple pieces and cinnamon. Cook until the apples are tender, about 5 minutes. Set aside.
  11. Use a 1.5” cookie scooper to scoop ice cream into cups and top with apple pieces.
  12. Finish with caramel or other toppings if desired.
