Ingredients

COFFEE BROWNIES

  • ¼ cup butter
  • 1 cup sugar free chocolate chips
  • ¼ cup zero calorie sweetener
  • 2 eggs, room temperature
  • ½ cup almond flour
  • ¼ cup coconut flour
  • ¼ cup unsweetened cocoa powder
  • ⅛ tsp salt
  • ¾ cup Quest Coffee Protein Shake

Method

  1. Preheat the oven to 350 F and prepare an 8×8 inch pan with non-stick spray and parchment paper.
  2. Add the butter to a microwave safe bowl and melt for 1 minute and butter is scolding.
  3. Add in the chocolate chips and let sit for 5 minutes before stirring smooth.
  4. Once smooth and no longer hot to the touch, whisk in the sweetener and eggs.
  5. In another bowl, sift together the flours, cocoa powder and salt.
  6. Add the wet ingredients to the dry as well as the Quest Shake Coffee and whisk until smooth.
  7. Transfer to the prepared pan and bake for 20-25 minutes.
  8. Let cool for 2 hours before cutting into 16 bars and serving.
