Ingredients
QUESTIFIED GREEK SALAD PIZZA
- 8oz cream cheese, room temperature
- 2 cups cheddar cheese
- 1 jalapeno, seeds removed
- 2 egg, diced
- 1⁄3 cup coconut flour
- 2 bags Quest Nacho Cheese Tortilla Chips, crushed
Method
- In a mixing bowl, stir together the cream cheese, cheddar cheese and jalapeno.
- Spray a 1 1⁄2 inch cookie scoop with non-stick spray and use it to make 14 evenly sized balls of the mixture.
- Place the balls on a tray lined with parchment paper and chill while you prepare the other ingredients.
- Place the eggs into a bowl and whisk until smooth.
- Place the coconut flour into another bowl and the crushed chips into a third bowl.
- Working with 5 balls at a time, coat each one in coconut flour, then egg and finally cover with crushed chips.
- Place them into the tray of an air fryer and cook at 375F for 5 minutes and golden brown.
- Repeat until you have cooked all of the balls.
- Insert a toothpick and serve.
