Ingredients
HOT & SPICY TACO SALAD
For the beef:
- 1 tbsp olive oil
- 1 lbs lean beef, ground
- 2 tsp chili powder
- 2 tsp cumin
- 1 tsp garlic powder
- ½ tsp smoked paprika
- ¼ tsp salt
- ¼ tsp pepper
For the salad:
- ½ cup water
- 3 romaine hearts, chopped
- 8 cherry tomatoes, quartered
- 1 jalapeno, sliced
- 1 avocado, cubed
- ¼ red onion, small
- 2 bags Quest Hot & Spicy Protein Chips
Method
- Heat a large skillet with medium heat.
- Once hot, add the olive oil, beef and begin to cook while breaking the beef into small pieces.
- Once almost cooked through, drain the grease and then add the seasonings and water.
- Simmer until the water has thickened, about 3 minutes.
- Assemble your salad in a large bowl or in individual bowls by adding all the salad ingredients and topping with beef and Quest chips.
- Serve with dressing if desired.
