Ingredients
SPICY CHEDDAR CHEESE CRACKERS QUICHE
Crust
Filling:
- 6 eggs
- ½ cup part skim ricotta cheese
- ½ cup cheddar cheese, grated
- ¼ tsp salt
- 1 tbsp hot sauce
- 2 cups spinach, chopped
- 5 cherry tomatoes, halved
Method
- Preheat the oven to 350 F and prepare a 9” pie dish with non-stick spray.
- Place the almond flour and cheese crackers into a food processor and pulse until small crumbles form.
- Add in the melted butter and pulse to combine.
- Press the mixture into the bottom and up the sides of the pie dish.
- Use the bottom of a measuring cup to flatten and smooth. Bake the crust for 5 minutes, cover with tin foil and bake an additional 6-7 minutes.
- In a large bowl, beat the eggs. Whisk in the ricotta, cheddar cheese, salt, hot sauce and chopped spinach.
- Pour the egg mixture into the baked pie crust and top with tomatoes.
- Bake for 10 minutes, cover and continue to bake for 35-40 minutes or until cooked through.
- Cut into 8 slices and serve.
