Ingredients

HOT & SPICY CHICKEN PARMESAN

  • 3 chicken breasts, pounded (15oz)
  • 2 tbsp coconut flour
  • 2 eggs, whisked
  • 3 bags Quest Hot and Spicy Chips, finely crushed
  • ⅓ cup finely shredded parmesan cheese
  • 6 tbsp spicy marinara sauce
  • ½ cup shredded mozzarella cheese
  • Fresh basil for topping
  • Crushed red pepper for topping

Method

  1. Preheat the oven to 425 F and prepare a baking sheet with parchment paper.
  2. Pat dry the chicken breast using a paper towel. Place the coconut flour on a plate or shallow bowl, the eggs into a shallow bowl and the chips and parmesan into a shallow bow.
  3. Coat each chicken breast in coconut flour and then cover with the whisked eggs.
  4. Finely, coat with the crushed chip and parmesan mixture until they are completely covered on all sides and place them on the baking sheet.
  5. Bake for 20 minutes, remove from the oven and spoon the marinara sauce over the chicken breast and top with mozzarella cheese.
  6. Return to the oven for 5 minutes or until cooked through.
  7. Serve with fresh basil and crushed red pepper.
