Ingredients

FROSTED COOKIE MUMMY BROWNIES

  • 2 Quest Frosted Cookies
  • ¾ cup almond flour
  • ⅓ cup special dark unsweetened cocoa powder
  • Pinch sea salt
  • ¼ cup sugar free dark chocolate chips
  • ½ cup + 2 tbsp butter
  • ½ cup zero calorie sweetener
  • 3 eggs
  • 2 tsp vanilla extract
  • ½ cup sugar free white chocolate chips
  • 1 tsp coconut oil
  • 32 candy eye balls

Method

  1. Preheat the oven to 350 F and prepare an 8×8 inch pan with parchment paper.
  2. Place the cookies into a food processor or nutribullet and blend until fine crumbles form.
  3. Transfer to a mixing bowl and combine with the almond flour, cocoa powder and salt.
  4. In a microwave safe bowl, add the chocolate chips, butter and sweetener and microwave on high for 20 seconds.
  5. Stir and microwave again for 20 seconds. Stir smooth. Let cool slightly before whisking in the eggs and vanilla extract.
  6. Add in the dry ingredients and stir until a batter comes together.
  7. Transfer to the pan and spread out the batter into an even layer. Bake for 20-25 minutes. Let cool completely before cutting into 16 bars.
  8. Add the white chocolate chips and coconut oil in a glass bowl over a small pot of simmering water, stirring occasionally until melted.
  9. Transfer to a plastic zip bag and cut the corner to make a piping bag and make zig zags across the brownies, finish with candy eyes and chill untilchocolate is solid.
